Ingredients
  

For the Potato Filling:

  • 4 medium-sized boiled and mashed potatoes
  • 1 small finely chopped onion
  • 2/3 cloves of minced garlic
  • 1/2 cup pomegranate seeds
  • 2 tbsp dabeli masala (readily available or homemade)
  • 2 tbsp tamarind chutney
  • Salt to taste
  • A pinch of asafoetida
  • 2 tbsp oil
  • 2 tbsp roasted peanuts
  • 2 tbsp chopped coriander leaves

For Assembling:

  • 6 Pav (buns)
  • Butter for toasting
  • Garlic chutney
  • Pomegranate seeds
  • Roasted peanuts
  • Sev (crunchy chickpea noodles)
  • Coriander leaves

Instructions
 

  • In a pan, heat oil and add minced garlic and chopped onions. Sauté until they turn translucent.
  • Add the mashed potatoes, dabeli masala, tamarind chutney, salt, and asafoetida. Mix everything well and cook for a few minutes until the filling becomes fragrant and blends together.
  • Remove the potato filling from heat and let it cool.
  • Slice the pav (buns) horizontally, keeping one end intact. Spread garlic chutney on one side and butter on the other.
  • Place a generous portion of the potato filling inside the bun.
  • Garnish with pomegranate seeds, roasted peanuts, sev, and fresh coriander leaves.
  • Press the bun gently to close and seal the filling.
  • Heat a griddle or tava and toast the assembled Dabeli on both sides until it's crispy and golden.
  • Serve hot with additional garlic chutney or tamarind chutney on the side.
